It looks like updating to 10.8.2 fixed the crashes, at least for several people.

Virtual Programming has uploaded Lion compatibility files for various programs ( http://www.vpltd.com/lionupdates/ ). Europa Universalis III Complete, Heir to the Throne and Divine Wind have all been updated. With these files the game runs.
Europa Universalis III experiences frequent system crashes with OS 10.8.1. Games will load but on zooming in will usually crash and force a hard reboot.
