Epson Scan Version 3.26A is also labeled by the company as (Universal). Worked fine w/ Snow Leopard, still works fine w/ Lion.

PPC app? Er, I've got 3.5 installed under Snow Leopard at the moment, and Get Info dialogue tells me it's a Universal app:

Installing Lion on another computer tonight, will try running Epson Scan 3.5 and see how it goes, then if that fails I'll try a later version.

had version 3.48G (universal) installed. After upgrade to Lion, everything worked fine as before.
Note: Installer EpsonNet Config does not work (PPC). The Scanner must be configured in Snow Leo, before you upgrade to Lion.

Old scanners such as Perfection 1240U seem not to work with the latest version of Epson Scan. Only old 2.73 works pretty fine but it's a PowerPC app so it isn't running on Lion.
However, these old scanners still work very well with Lion's Image Capture. Neither Epson software nor driver needed :)
